Ingredients: 4 large sweet potatoes, peeled and cubed. 1/2 cup butter, melted. 1/4 cup brown sugar. 1/4 cup milk. 2 eggs, beaten. 1 teaspoon vanilla extract. 1/2 teaspoon ground cinnamon. 1/4 teaspoon ground nutmeg. 1/4 teaspoon salt. 1 cup mini marshmallows optional.
Instructions: Warm the oven up to 175F 350C. In a big pot of water, boil sweet potatoes until they are soft. This should take about 15 to 20 minutes. Drain and mix. Melted butter, brown sugar, milk, beaten eggs, vanilla extract, cinnamon, nutmeg, and salt should all be mixed together in a bowl. Mix everything together well. Put the mixture in a casserole dish that has been greased. For 25 to 30 minutes, or until hot all the way through and lightly browned on top, bake in an oven that has already been heated. Add mini marshmallows on top during the last 5 minutes of baking, until they are golden brown and melted if you want to. Enjoy while hot!
