Ingredients: 4 cups fresh green beans, trimmed and cut into bite-sized pieces. 6 slices bacon, cooked and crumbled. 1 cup grated cheddar cheese. 1/2 cup sour cream. 1/2 cup mayonnaise. 1/2 cup diced onion. 1/2 cup crushed buttery crackers. 2 tablespoons butter, melted. 1/2 teaspoon garlic powder. 1/2 teaspoon salt. 1/4 teaspoon black pepper.
Instructions: Preheat your oven to 350F 175C. In a large pot of boiling water, blanch the green beans for 2-3 minutes, then immediately transfer them to an ice bath to stop the cooking process. Drain and set aside. In a mixing bowl, combine the sour cream, mayonnaise, grated cheddar cheese, diced onion, garlic powder, salt, and black pepper. Add the blanched green beans and half of the crumbled bacon to the mixture. Stir until well combined. Transfer the green bean mixture to a greased baking dish. In a separate bowl, mix together the crushed buttery crackers and melted butter. Sprinkle this mixture over the green bean mixture in the baking dish. Top the casserole with the remaining crumbled bacon. Bake in the preheated oven for 25-30 minutes, or until the casserole is hot and bubbly, and the topping is golden brown.
