Ingredients: 6 large potatoes, peeled and diced. 1/2 cup sour cream. 1/2 cup milk. 1/2 cup shredded cheddar cheese. 1/4 cup chopped green onions. 6 slices cooked bacon, crumbled. Salt and pepper to taste.
Instructions: Preheat oven to 375F 190C. Boil diced potatoes until tender, then drain and place in a large bowl. In the same bowl, add sour cream, milk, half of the shredded cheese, half of the chopped green onions, and half of the crumbled bacon. Mix well. Season with salt and pepper to taste. Transfer the potato mixture to a greased baking dish. Sprinkle the remaining shredded cheese, green onions, and bacon over the top. Bake in the preheated oven for 20-25 minutes or until cheese is melted and bubbly. Serve hot and enjoy!
