Dinner was amazing.
Beer battered catfish nuggets, Plantains & spicy tartar sauce.
Never had catfish before, so I hope a beer batter was a good choice. 10/10 on the catfish. I honestly though it was going to have a swampy fish taste but, there was zero fish taste and smell, even raw it had zero smell. My beer batter complimented the succulent fish nuggets very well. Made a spicy lemon tartar sauce. Paired the fish with some fried plantains that were a bit ripe (soft, sweet and actually had more banana flavor than potato). Which made me realize that savory bananas are good. Garnished with lime because we didn't have lemons (used 2 true lemon packets in the sauce) and the lime ascended the dish.
Yeah, could've had some kind of veggie but, tonight was big back night and there's some fiber in the plantains.
Happy tummy and grateful for the food and that my son loves my cooking and loves fish like I do. That makes me love cooking for him. Cooking is part of my love language
