This lemony couscous with thyme is a bright and refreshing side dish that pairs perfectly with a variety of main courses. The zesty lemon and aromatic thyme add a burst of flavor to the fluffy couscous.
Ingredients: 1 cup couscous. 1 1/2 cups vegetable broth. 2 tablespoons olive oil. 1 lemon zest and juice. 1 teaspoon fresh thyme leaves. Salt and pepper to taste.
Instructions: Bring the vegetable broth to a boil in a saucepan. Put the couscous in a bowl that can handle heat and pour the hot broth over it. Put a lid or plastic wrap on top and wait 5 minutes. Use a fork to fluff up the couscous and separate the grains. Mix the lemon juice, zest, and fresh thyme leaves together in a different bowl. Add the lemon and thyme mixture to the couscous and mix it all together. Add pepper and salt to taste. If you want, you can serve the lemony couscous with fresh thyme leaves and lemon wedges on top.
