Cauliflower Cake
Cauliflower Cake: This is not your average sweet cake but a savory one. When I was first given this recipe I thought I wouldn’t like it but I was shocked that it was really good. I hope that you enjoy this cake. You’ll have to let me know what you think. Please enjoy!
Cauliflower Cake Ingredients:
1 medium size cauliflower, cut into florets
1 large red onion
1/3 cup olive oil
1/2 teaspoon minced fresh rosemary leaves
8 large eggs
1 1/2 cups flour
2 1/2 teaspoons baking powder
1/2 teaspoon turmeric
1 1/2 teaspoon salt
1/2 teaspoon ground black pepper
1/4 teaspoon chopped fresh basil
2 cups grated parmesan cheese
Preparation:
1. Preheat oven to 350. In large pan of salted water over medium heat simmer cauliflower for 15 minutes until soft but not mushy. Remove from heat. Drain and rinse with cold water. Drain again.
2. Cut several thin slices from one end of the onion. Separate into rings. Set Aside. Coarsely chop the remaining onion
3. In skillet over medium heat warm the oil. Add the chopped onion and rosemary. Saute until onion is soft, about 8 minutes. Set Aside.
4. In a bowl combine the flour, baking powder, turmeric, salt, and pepper. Set Aside.
5. In another bowl, whisk eggs. Add cooked onion, milk, and basil. Whisk in the flour mixture. Stir in parmesan cheese until well combined. Stir in the cauliflower. Set Aside.
6. Grease inch spring-form pan. Line bottom with parchment paper and grease the parchment paper. Pour cauliflower mixture into the pan. Arrange the reserved onion rings over the top of the batter.
Bake for 45-50 minutes until golden brown and the center is set. Run knife around edges of pan. Let stand for 10 minutes then remove the rim of the pan before cutting into wedges.
