This roasted cauliflower gratin with tomatoes and goat cheese is a tasty and filling side dish that is also keto-friendly. I roasted the cauliflower until it turned caramelized. Then I added juicy cherry tomatoes and tangy goat cheese on top to give it a big flavor boost. Adding fresh basil at the end will make it a favorite in your rotation!
Ingredients: 1 large head cauliflower, cut into florets. 2 tablespoons olive oil. Salt and pepper to taste. 1 pint cherry tomatoes, halved. 4 ounces goat cheese, crumbled. 2 tablespoons fresh basil, chopped.
Instructions: Preheat the oven to 425F 220C. Place the cauliflower florets on a baking sheet and drizzle with olive oil. Season with salt and pepper, then toss to coat evenly. Roast the cauliflower in the preheated oven for 20-25 minutes, or until tender and golden brown. Remove the cauliflower from the oven and sprinkle the halved cherry tomatoes and crumbled goat cheese over the top. Return the baking sheet to the oven and bake for an additional 5-7 minutes, or until the cheese is melted and bubbly. Remove from the oven and garnish with chopped fresh basil before serving.
