Ingredients: 2 cups heavy cream. 1 cup whole milk. 3/4 cup granulated sugar. 4 chai tea bags. 4 large egg yolks. 1 teaspoon vanilla extract. 1/2 cup chopped pecans.
Instructions: In a saucepan, combine heavy cream, whole milk, and sugar. Heat over medium heat until sugar dissolves, stirring occasionally. Add chai tea bags to the mixture. Let it steep for 20-30 minutes, then remove the tea bags. In a separate bowl, whisk the egg yolks. Gradually whisk in a small amount of the warm cream mixture to temper the eggs. Pour the egg mixture back into the saucepan with the remaining cream mixture. Cook over medium heat, stirring constantly, until the mixture thickens and coats the back of a spoon about 5-7 minutes. Do not let it boil. Remove from heat and stir in vanilla extract. Strain the mixture through a fine-mesh sieve into a clean bowl. Cover and refrigerate until completely chilled, preferably overnight. Once chilled, churn the mixture in an ice cream maker according to manufacturer's instructions. During the last few minutes of churning, add chopped pecans to incorporate into the ice cream. Transfer churned ice cream to a freezer-safe container, cover, and freeze until firm about 4 hours or overnight.
