Haven’t made cheese dice for a while, and cheddar was on sale. Made with cheddar, a few spoonfuls of sodium citrate, and a little water. More air bubbles than I’d like in this batch, might add more water next time.

Tried making cheese dice for the first time in a long time. Not a great batch, overall. I tried cheese curd dice mixed with some sodium citrate to get a smoother result. Ended up adding too much citrate, and I didn’t reheat the cheese enough before combining the molds. End result kinda fell apart on me, and it doesn’t taste great. I made notes this time so I can actually learn from this mistake.

Made some Nacho Cheese dice, a mozzarella and cheddar mix. The colours look great. I ended up using more heat than usual just to see what would happen, and they melted in the mold a bit. A tasty set overall.

After the nacho cheese dice turned out decent I decided to tempt fate and made cheese curd dice. Made it into a poutine for dinner last night.

I think I’ll try a softer cheese next time, the stringy cheese curds were hard to mold and they lost so much fat when I melted them.
