Tender chicken, smoky chipotle peppers, and gooey melted cheese are combined in this flavorful and spicy dish that is served over fluffy rice.
Ingredients: 1 cup rice. 2 cups chicken broth. 1 lb chicken breast, diced. 1 tablespoon olive oil. 1 onion, diced. 2 cloves garlic, minced. 1 can chipotle peppers in adobo sauce, minced. 1 cup shredded cheddar cheese. Salt and pepper to taste.
Instructions: In a pot, bring chicken broth to a boil. Add rice, reduce heat to low, cover, and simmer for 18-20 minutes until rice is cooked. In a skillet, heat olive oil over medium heat. Add diced chicken and cook until browned and cooked through. Add diced onion, minced garlic, and minced chipotle peppers. Cook until onions are soft and translucent. Combine cooked rice with the chicken mixture in the skillet. Add shredded cheddar cheese and stir until cheese is melted and everything is well combined. Season with salt and pepper to taste. Serve hot and enjoy!
