These melts are a tasty take on the classic eggplant Parmesan. They are made with breaded eggplant slices that are crispy on the outside and layered with marinara sauce and gooey mozzarella cheese.
Ingredients: 1 large eggplant, sliced into 1/4-inch rounds. 1 cup breadcrumbs. 1/2 cup grated Parmesan cheese. 2 eggs, beaten. 1 cup marinara sauce. 8 slices mozzarella cheese. 8 slices sandwich bread. 2 tablespoons olive oil. Salt and pepper to taste.
Instructions: Preheat oven to 400F 200C. Season eggplant slices with salt and pepper. Dip each slice into beaten eggs, then coat with breadcrumbs mixed with Parmesan cheese. Heat olive oil in a skillet over medium heat. Fry eggplant slices until golden brown on both sides, about 2-3 minutes per side. Place fried eggplant slices on a paper towel-lined plate to drain excess oil. On a baking sheet, arrange 4 slices of bread. Spread marinara sauce on each slice. Top with fried eggplant slices and a slice of mozzarella cheese. Cover each sandwich with another slice of bread. Bake in the preheated oven for 5-7 minutes, or until the cheese is melted and bubbly. Serve hot and enjoy!
