Ingredients: 1 pound ground beef. 1 small onion, diced. 1 packet taco seasoning mix. 2 cups water. 1 10-ounce can diced tomatoes with green chilies. 1 8-ounce can tomato sauce. 2 cups elbow macaroni. 1 cup shredded cheddar cheese. 1/2 cup shredded Monterey Jack cheese. 1/2 cup sour cream. Salt and pepper to taste. Fresh cilantro, chopped for garnish. Sliced jalapeos optional, for garnish.
Instructions: Set the ground beef in a large skillet over medium-high heat and break it up as it cooks. Get rid of any extra fat. Put the diced onion in the pan with the cooked beef and cook for two to three minutes, until the onion is soft and clear. Add the taco seasoning mix and stir it in. Cook for two more minutes to let the spices bloom. Put the elbow macaroni, water, diced tomatoes with green chilies, tomato sauce, and green chilies into the pan. Use a stir to mix. Once the mixture starts to boil, lower the heat, cover, and let it simmer for 10 to 12 minutes, stirring every now and then, until the pasta is soft.
