These cheesy zucchini rice are a great low-carb alternative to regular rice. They are also very tasty and great for people on the keto diet.
Ingredients: 2 medium zucchinis, grated. 2 tablespoons butter or ghee. 1/2 cup shredded mozzarella cheese. 1/4 cup grated Parmesan cheese. Salt and pepper to taste.
Instructions: Heat butter or ghee in a skillet over medium heat. Add grated zucchini and saut for 5-7 minutes until softened. Season with salt and pepper. Stir in shredded mozzarella cheese until melted and well combined. Sprinkle grated Parmesan cheese on top and stir until melted. Serve hot and enjoy!
