the week's menu looks as follows:
tonight is oven-baked chicken thighs and brussels sprouts (both with a mix of seasonings, mainly thyme oregano and sea salt). I salt-brined the chicken with water, salt, lemon juice, and seasonings/herbs for a few hours beforehand.
tomorrow we're going out for the holiday :) pub food!
wednesday is catfish tacos with homemade pico de gallo, fresh radishes, and some kind of crema-based sauce. I plan to make a cumin, coriander, and salt olive oil-based marinade that I will first quick-marinate the fish in and then boil and brush onto the cooked fish.
thursday is oven-baked thick cut NY pork chops with brown sugar and butter glazed carrots. the pork chops will also be salt-brined for a few hours ahead of time and then soaked in brown sugar, rosemary, sea salt, thyme, and olive oil.
friday is steak and mushrooms! the steak will be first be marinated in lemon juice and olive oil, then pan-seared with a drizzle of olive oil and a light coating of rosemary, lemon pepper, sea salt, and smoked paprika. the mushrooms will be bathed in butter and sauteed, with a sprinkle of salt and thyme. I'll add some butter to the steaks after cooking during the resting periob.
