Counting House and executive chef Josh Munchel will host a dinner and book signing on Thursday, September 22 at 7:00 p.m. in celebration of the release of Poole’s: Recipes and Stories from a Modern Diner, a cookbook by chef Ashley Christensen. Christensen, James Beard Award winner and chef and proprietor for well-known Triangle-based restaurants such as Poole’s Diner and Death & Taxes, will meet guests and sign books at the event. The event will begin with a casual reception including a welcome cocktail and “counter snacks.” Dinner by executive chef Josh Munchel will feature four-courses inspired by recipes from the book. Christensen’s recipes in Poole’s honor the traditions of Southern cuisine, while elevating simple sides with complex vinaigrettes and giving vegetables center stage. Munchel’s menu reflects these influences, but with a Counting House spin. The menu includes unique dishes such as the four “shared” menu items of elevated “comfort food”: Tahini-Roasted Whole Fish, Barley and Beans, Roasted Potatoes and Greens. “Ashley welcomed us to the community from the start and we are honored to celebrate this amazing accomplishment with her and her team. When putting together the menu, she asked us not to cook directly from the book, but how the book made us want to cook,” said executive chef Josh Munchel. Price for the dinner is $95 per person plus tax and gratuity and includes dinner, welcome cocktail, counter snacks and a copy of the book.
