Perfect as a side dish or a main course, this Rice and Wheat Berry Pilaf is a delightful combination of flavors and textures. Wheat berries and basmati rice give the dish a chewy, nutty texture, and the vegetables give it some color and freshness.
Ingredients: 1 cup basmati rice. 1/2 cup wheat berries. 2 tablespoons olive oil. 1 onion, finely chopped. 2 cloves garlic, minced. 1 carrot, diced. 1/2 cup frozen peas. 2 cups vegetable broth. Salt and pepper to taste. 2 tablespoons chopped parsley, for garnish.
Instructions: Rinse the basmati rice and wheat berries under cold water. In a large skillet, heat olive oil over medium heat. Add chopped onions and minced garlic, saut until translucent. Add diced carrots and cook for another 2 minutes. Stir in rice and wheat berries, cook for 1 minute to toast. Pour in vegetable broth, season with salt and pepper. Bring to a boil. Reduce heat to low, cover, and simmer for 20 minutes or until rice and wheat berries are tender and liquid is absorbed. Stir in frozen peas and cook for an additional 5 minutes. Garnish with chopped parsley before serving.
