And the exchange between Anderson, Sally, and Sherlock towards the beginning made me realize that Sherlock blurts out his deductions like that because its HABIT.
It started when chibi!Sherlock was always picked on for being more interested in science and mysteries than football and the other kids, so they picked on him. He retaliated in the only way he could: by spilling all the little secrets about the bully (ies) so they would back off.
Over time, the defense mechanism grew to the point that he would do a lighter reading upon initial meeting and could use their reactions as a judge of character. You notice he only spills the "bad" secrets of "bad" people.
