Daily MCO Drink #144, MCO Day #145: CHICAGO FIZZ, made with 1.5 parts Mount Gay Eclipse Rum, 1 part Sandeman port, 1 egg white, 1/2 part lemon juice, 1 teaspoon sugar, dry shaken to get the foam, then shaken again over ice then strained and topped up with soda. . Oh dear, I haven’t had much luck with the Fizz drinks. This was arguably a better effort than the Ramos Gin Fizz, but It still didn’t seem right. . The difference between this and other fizzes is the Port, but I think the one I used was already pass ita best by date. It still had that sweet Port note and was still pretty drinkable, but the balance was a bit off.
