Parenting… If you are not tired you are doing it wrong. Or at least that is what I tell myself!
Miss 4mths is going through the beloved 4mth sleep regression so nobody in our house is getting any sleep (I’d guess no one in our street is!). Needless to say, today I didn’t want to make dinner for anyone.
To get myself out of the dinner funk and to get motivated I decided to make something fun. My choice was chicken and leek pie.
Overtime I have come to make this pie free hand in the thermie and I don’t follow any particular recipe for the filling, instead I just use what I have in the fridge whilst incorporating the basics like chicken, garlic, leek, flour and stock. Today I added rosemary, mushrooms and carrots. It is also great with bacon.

I use this recipe for the shortcrust (http://www.recipecommunity.com.au/b…/shortcrust-pastry/17060). Using this recipe to make the shortcrust takes just as long as opening the door to the freezer section at Coles so you may as well make it yourself and know there are no nasties in it.
You can also make your own puff pastry in the thermie (see http://www.recipecommunity.com.au/…/rough-puff-pastry/187232) but I don’t due to the multiple refrigeration steps it requires.
I made four individual pies (base of shortcrust and topped with puff pastry) and set the remaining filling aside for freezing. The best thing about this meal is that any left over filling can be served with rice for a great toddler meal later on. When Miss 4mths is a bit older I will puree the filling for her.
I served the pies with a green salad (forgot to get a dinner shot). Mr 2.5 thought the pies were cool and managed to eat half a pie, which I thought was a pretty good effort.
