A comforting and hearty casserole featuring tender chicken, nutty wild rice, and a medley of vegetables, all baked to perfection with a cheesy topping.
Ingredients: 2 cups cooked chicken, diced. 1 cup cooked wild rice. 1 cup chicken broth. 1/2 cup diced onion. 1/2 cup diced celery. 1/2 cup diced carrots. 1/2 cup frozen peas. 1/2 cup shredded cheddar cheese. 1/4 cup all-purpose flour. 2 tablespoons butter. 1 teaspoon garlic powder. 1/2 teaspoon dried thyme. Salt and pepper to taste. Cooking spray.
Instructions: Warm the oven up to 190C 375F. Melt the butter in a big pan over medium-low heat. Put in the carrots, onions, and celery. Cook the vegetables in oil until they are soft. Mix in the thyme, garlic powder, and flour, and cook for one to two minutes. Slowly whisk in the chicken broth until the mixture is smooth and thick. Put wild rice, peas, and cooked chicken in the pan. Use a stir to mix. Add pepper and salt to taste. Put the mixture in a casserole dish that has been greased. Cover the whole thing with shredded cheddar cheese. Put it in an oven that has already been heated for 25 to 30 minutes, or until it bubbles and the cheese melts. Enjoy while hot!
