While it is a labor intensive process including scraping the meat off the chicken bones, pulsing with cream/herbs in a food processor, stuffing the chicken mousse in the chicken skin, wrapping in cheesecloth, simmering in chicken stock, searing/baking till crisp, it is SO WORTH the effort!
