Ingredients: 1 bottle of your favorite red wine. 4 boneless skinless chicken breasts. Salt and pepper to taste. 2 tablespoons olive oil. 1 onion, finely chopped. 3 cloves garlic, minced. 1 cup sliced mushrooms. 1 cup chicken broth. 1/2 cup heavy cream. 1 tablespoon chopped fresh thyme. 1 tablespoon chopped fresh parsley.
Instructions: Preheat oven to 375F 190C. Season chicken breasts with salt and pepper. In a large oven-safe skillet, heat olive oil over medium-high heat. Add chicken breasts and cook until golden brown on both sides, about 3-4 minutes per side. Remove chicken from skillet and set aside. In the same skillet, add chopped onion and garlic. Cook until softened, about 2-3 minutes. Add sliced mushrooms and cook until they release their juices and start to brown, about 5 minutes. Pour in chicken broth and bring to a simmer. Let it cook for 2-3 minutes. Stir in heavy cream, thyme, and parsley. Let the sauce simmer for another 2-3 minutes. Return chicken breasts to the skillet, spooning some of the sauce over the top. Transfer the skillet to the preheated oven and bake for 20-25 minutes, or until chicken is cooked through. Serve chicken with the mushroom cream sauce poured over the top, accompanied by a glass of red wine.
