As a tasty and healthy meal option, Lemon Pepper Chicken Pitas combine the sour and spicy tastes of lemon and pepper with grilled chicken, fresh vegetables, and smooth Greek yogurt. It's easy to make these pitas, and they're great for lunch or dinner.
Ingredients: 2 boneless, skinless chicken breasts. 2 tablespoons olive oil. 1 tablespoon lemon pepper seasoning. 4 whole wheat pita bread rounds. 1 cup Greek yogurt. 1 cucumber, diced. 1 cup cherry tomatoes, halved. 1/2 red onion, thinly sliced. 1/4 cup fresh parsley, chopped. Salt and pepper to taste.
Instructions: Warm up your grill or grill pan on the stove by setting it on medium-high heat. Rub the chicken breasts with olive oil and lemon pepper seasoning. Then add salt and pepper to taste. As long as the chicken breasts are cooked all the way through and have nice grill marks, they are done. Check to see if the temperature inside reaches 74F 165C. Warm the pita bread rounds on the grill for about one to two minutes on each side until they are just barely toasty while the chicken is cooking. After taking the chicken off the grill, let it rest for a few minutes. Then, cut it into thin strips. Put some lemon pepper seasoning in a small bowl and mix it with Greek yogurt to make it taste better. Spread a large spoonful of seasoned Greek yogurt on each pita bread before putting them together. Put grilled chicken slices, cucumber chunks, cherry tomato halves, red onion slices that are very thin, and fresh parsley that has been chopped on top of the yogurt. If you want, you can add a little more lemon pepper seasoning, salt, and pepper. The pitas are ready to be served when you fold them in half. You can eat your Lemon Pepper Chicken Pitas with a cool salad or your favorite dipping sauce.
