A tasty and filling sandwich with crispy fried chicken on a soft roll and traditional Po Boy toppings.
Ingredients: 2 boneless, skinless chicken breasts. 1 cup all-purpose flour. 1 teaspoon salt. 1 teaspoon paprika. 1/2 teaspoon garlic powder. 1/2 teaspoon onion powder. 1/4 teaspoon cayenne pepper. Vegetable oil for frying. 4 sandwich rolls such as French bread or hoagie rolls. Lettuce leaves. Sliced tomatoes. Sliced pickles. Mayonnaise. Hot sauce optional.
Instructions: To make thinner pieces, cut the chicken breasts in half across the middle. Put the flour, salt, paprika, garlic powder, onion powder, and cayenne pepper in a shallow dish. Mix them together. Cover each piece of chicken in the seasoned flour mix. Shake off any extra. Put the vegetable oil in a big skillet and heat it over medium-high heat. It should take about 4 to 5 minutes per side to fry the chicken until it is golden brown and fully cooked. Take the chicken out of the pan and put it on paper towels to drain. Cut the rolls in half along their length. On one side of each roll, spread mayonnaise. Put fried chicken, pickles, sliced tomatoes, and lettuce leaves on the rolls. If you want, drizzle with hot sauce. Serve right away and enjoy!
