Ingredients: 2 cups cooked and shredded chicken breast. 1 cup corn kernels. 1 cup black beans, drained and rinsed. 1 cup cherry tomatoes, halved. 1/2 cup red onion, finely chopped. 1/2 cup bell pepper, diced. 1/4 cup cilantro, chopped. 1/4 cup shredded cheddar cheese. 1/4 cup tortilla strips. 2 tablespoons olive oil. 2 tablespoons lime juice. 1 teaspoon cumin powder. 1/2 teaspoon chili powder. Salt and pepper to taste. Romaine lettuce, chopped, for serving.
Instructions: Shred the chicken and put it in a large bowl. Add the corn, black beans, cherry tomatoes, red onion, bell pepper, cilantro, and cheddar cheese. Put the olive oil, lime juice, cumin powder, chili powder, salt, and pepper in a small bowl and mix them together with a whisk. Pour the dressing over the salad and toss it around to make sure everything is covered. To serve, put some chopped romaine lettuce on each plate and then add the Southwest chicken mixture on top of it. If you want, you can add tortilla strips and more cilantro as a garnish.
