Ingredients: 2 ripe pineapples. 1 cup diced chicken breast. 1/2 cup barbecue sauce. 1/4 cup soy sauce. 2 tablespoons honey. 1 tablespoon minced garlic. 1 teaspoon grated ginger. 1 cup cooked quinoa. 1/2 cup diced bell peppers assorted colors. 1/4 cup chopped green onions. Salt and pepper to taste. Fresh cilantro for garnish. Crushed red pepper flakes optional.
Instructions: Cut the pineapples in half lengthwise and hollow out the insides, leaving a bowl-like shell. Reserve the pineapple chunks for later use. In a bowl, mix diced chicken with barbecue sauce, soy sauce, honey, minced garlic, and grated ginger. Marinate for at least 30 minutes. Heat a grill or barbecue to medium-high heat. Grill the marinated chicken until fully cooked and slightly charred. Set aside. In a pan, saut diced bell peppers until slightly tender. Season with salt and pepper. Mix cooked quinoa with grilled chicken and sauted bell peppers. Add reserved pineapple chunks and chopped green onions. Adjust seasoning to taste. Fill the hollowed pineapple bowls with the quinoa-chicken mixture. Garnish with fresh cilantro and, if desired, sprinkle with crushed red pepper flakes for a hint of spice.
