It was a busy baking week for me. With the many holidays and celebrations coming up, I need an arsenal of great recipes. Even better is to have recipes that include chocolate. Lots of chocolate.
One of my favourite recipes this week is Double Chocolate Chip Cookies.

Double Chocolate Chip Cookies
What you need: 4 ounces dark chocolate ½ cup unsalted butter, at room temperature ½ cup brown sugar 1 large egg 1 tsp pure vanilla extract 1 cup + 3 tbsp all-purpose flour 4 tbsp unsweetened cocoa powder ½ tsp baking powder ½ tsp baking soda ½ tsp salt 2 cups bittersweet chocolate chips ½ cup semi-sweet chocolate for drizzling
What to do: Preheat oven to 350 degrees F with racks in the middle of the oven. Line two baking sheets with parchment paper and set aside. Melt 4oz dark chocolate either in a bowl over a pot of simmering water. Cream together butter and sugar until light and fluffy. Add the melted chocolate and mix together. Scrape down the sides of the bowl and add the egg and vanilla extract. Beat for 1 minute more. In a separate bowl whisk together flour, cocoa powder, baking powder, baking soda, and salt. Add the dry ingredients to the butter, egg and chocolate mixture. Mix on low speed until just combined. Stir in the chocolate chips. Using a small ice cream scoop, scoop the dough. Place on prepared cookie sheets, leaving about 1 ½ inches between each scoop of dough. Don’t flatten them. Bake for 12 minutes or until cookies are just done. They are best slightly under-baked. Allow to cool for about 5 minutes then transfer them to a cooling rack to cool. Melt the semi-sweet chocolate in the microwave and drizzle over the cooled cookies. Makes 24 cookies
