Chipotle beer marinated shrimp quesadillas that are tasty and spicy. They are served with a creamy sauce and spicy guacamole. Great for making a tasty meal.
Ingredients: 1 lb large shrimp, peeled and deveined. 1/2 cup chipotle beer marinade. 4 large flour tortillas. 2 cups shredded Monterey Jack cheese. 1 cup diced tomatoes. 1/2 cup diced red onion. 1/4 cup chopped cilantro. 1/4 cup sour cream. 1/4 cup mayonnaise. 2 cloves garlic, minced. 1 lime, juiced. 1 avocado, mashed. 1 jalapeo pepper, finely chopped. Salt and pepper to taste. Cooking oil for pan-frying.
Instructions: Put the shrimp and chipotle beer marinade in a bowl and mix them together. For 15 to 30 minutes, let it sit. Put the mashed avocado, lime juice, chopped jalapeo, and a pinch of salt in a different bowl. Mix them together to make the spicy guacamole. Put away. Put the pan on medium-high heat and add a little cooking oil. Put the shrimp in the pan after marinating them. Cook for two to three minutes on each side, or until they turn pink and opaque. Take it off the heat and set it aside. Add one tortilla to the pan and sprinkle with a quarter of the cheese that has been shred. Put some diced tomatoes, red onion, cilantro, and a quarter of the cooked shrimp on top. Put one more tortilla on top of it. The quesadilla should be cooked for two to three minutes on each side, or until it is golden brown and the cheese melts. Do it again with the rest of the filling and tortillas. Put sour cream, mayonnaise, garlic powder, salt, and pepper in a small bowl. Mix them all together to make a creamy sauce. To serve, cut the quesadillas into wedges and top with a bit of spicy guacamole and the creamy sauce. If you want, add more cilantro as a garnish.
