Ingredients: 1 lb shrimp, peeled and deveined. 2 tablespoons olive oil. 1 teaspoon chili powder. 1 teaspoon cumin. Salt and pepper to taste. 4 large flour tortillas. 2 cups shredded Monterey Jack cheese. 1 cup diced tomatoes. 1/4 cup chopped fresh cilantro. Sour cream, for serving. Guacamole, for serving.
Instructions: In a large skillet, heat olive oil over medium-high heat. Season shrimp with chili powder, cumin, salt, and pepper. Cook shrimp in the skillet until pink and cooked through, about 2-3 minutes per side. Remove from skillet and set aside. Place one tortilla in the skillet, sprinkle with cheese, cooked shrimp, tomatoes, and cilantro. Top with another tortilla and cook until the bottom tortilla is golden brown and crispy, and the cheese is melted, about 2-3 minutes per side. Repeat with remaining tortillas and fillings. Cut quesadillas into wedges and serve with sour cream and guacamole.
