These Chipotle Black Bean Freekeh Sliders are a tasty and filling vegetarian option that is full of protein and flavor. Great for lunches, parties, or any other event!
Ingredients: 1 cup cooked freekeh. 1 can 15 oz black beans, drained and rinsed. 1/2 cup breadcrumbs. 1/4 cup chopped cilantro. 2 cloves garlic, minced. 1 chipotle pepper in adobo sauce, minced. 1 teaspoon ground cumin. 1/2 teaspoon smoked paprika. Salt and pepper to taste. Slider buns. Toppings of choice lettuce, tomato, avocado, etc..
Instructions: Use a fork or potato masher to mash the black beans in a large bowl until they are mostly smooth. It's time to season the bowl. Add the cooked freekeh, breadcrumbs, cilantro, garlic, chipotle pepper, cumin, smoked paprika, salt, and pepper. Mix everything together well. Scoop out little patties of the mix that are about the size of your slider buns. Put the nonstick skillet on medium heat and lightly oil it. For three to four minutes on each side, or until golden brown and hot all the way through, flip the patties over. Put a patty on each bun and add any toppings you want to make sliders. Enjoy while hot!
