This old-fashioned toffee is rich, buttery, and topped with chocolate and chopped nuts. It's the perfect sweet treat for any occasion.
Ingredients: 1 cup vegan butter. 1 cup white sugar. 1/4 cup water. 1 teaspoon vanilla extract. 1/2 cup chopped nuts such as almonds, pecans, or walnuts. 1 cup vegan chocolate chips.
Instructions: Line a baking sheet with parchment paper. In a large heavy-bottomed saucepan, combine the vegan butter, sugar, and water. Cook over medium-high heat, stirring constantly, until the mixture reaches 300 degrees F 150 degrees C or until a small amount of mixture dropped into cold water forms hard, brittle threads. Remove from heat and quickly stir in the vanilla extract. Pour the mixture onto the prepared baking sheet and spread it out evenly with a spatula. Sprinkle the chopped nuts evenly over the hot toffee. Sprinkle the chocolate chips over the nuts. Allow the toffee to cool completely, then break it into pieces. Store in an airtight container.
