Ingredients: 1 1/2 cups all-purpose flour. 1/2 cup unsalted butter, softened. 1/2 cup granulated sugar. 1/2 cup brown sugar, packed. 1 egg. 1 teaspoon vanilla extract. 1/2 teaspoon peppermint extract. 1/2 teaspoon baking powder. 1/4 teaspoon salt. 1 cup chocolate chips. 1/2 cup green mint chocolate chips. 1/2 cup chopped fresh mint leaves.
Instructions: Preheat your oven to 350F 175C. Grease and line a 9x9 inch 23x23 cm baking pan with parchment paper, leaving an overhang on two opposite sides for easy removal later. In a mixing bowl, cream together the softened butter, granulated sugar, and brown sugar until smooth and creamy. Add the egg, vanilla extract, and peppermint extract, then mix until well combined. In a separate bowl, whisk together the flour, baking powder, and salt. Gradually add the dry ingredients to the wet ingredients, mixing until a dough forms. Fold in the chocolate chips, green mint chocolate chips, and chopped fresh mint leaves. Press the dough evenly into the prepared baking pan.
