Ingredients: 1 1/2 cups chocolate cookie crumbs. 1/2 cup unsalted butter, melted. 1 cup semisweet chocolate chips. 2 cups heavy cream. 1/4 cup granulated sugar. 2 teaspoons vanilla extract. 4 ounces cream cheese, softened. 1/4 cup powdered sugar. 1/2 cup cocoa powder. 1/4 cup milk. 1 teaspoon instant coffee granules. 1/2 cup white chocolate chips. 1/4 cup semisweet chocolate chips. Whipped cream and chocolate shavings for garnish.
Instructions: In a bowl, combine chocolate cookie crumbs and melted butter. Press the mixture into the bottom of a 9-inch springform pan to create the crust. Chill in the refrigerator while preparing the filling. In a microwave-safe bowl, melt the 1 cup of semisweet chocolate chips in 30-second intervals, stirring until smooth. Allow it to cool slightly. In a separate bowl, beat 1 cup of heavy cream until it forms stiff peaks. Add granulated sugar and vanilla extract, and beat until well combined. In another bowl, beat cream cheese and powdered sugar until smooth. Fold the melted chocolate into the whipped cream mixture until fully incorporated. Divide the chocolate mousse mixture into two equal portions. In one portion, fold in the cocoa powder, milk, and instant coffee granules until smooth. This will be your dark chocolate mousse layer. In the other portion, fold in the white chocolate chips and 1/4 cup of semisweet chocolate chips. This will be your white chocolate mousse layer. Pour the dark chocolate mousse over the chilled crust in the springform pan and spread it evenly. Carefully spoon the white chocolate mousse on top of the dark chocolate layer.
