Ingredients: 2 cups chocolate sandwich cookie crumbs. 1/4 cup unsalted butter, melted. 1 package 8 oz cream cheese, softened. 1/2 cup powdered sugar. 1/2 teaspoon peppermint extract. 1 1/2 cups heavy cream. 1 cup mini chocolate chips. Green food coloring optional. Whipped cream and extra chocolate chips for garnish.
Instructions: In a bowl, combine the chocolate sandwich cookie crumbs and melted butter. Mix until well combined. Press the mixture into the bottom of a greased 9x9-inch baking dish to form the crust. Place it in the refrigerator to set while preparing the filling. In a large bowl, beat the softened cream cheese until smooth and creamy. Add the powdered sugar and peppermint extract to the cream cheese. Beat until well incorporated. If desired, add a few drops of green food coloring to the mixture and mix until evenly colored. In a separate bowl, whip the heavy cream until stiff peaks form. Gently fold the whipped cream into the cream cheese mixture until smooth and well combined. Stir in the mini chocolate chips. Spread the mint chocolate filling evenly over the prepared crust in the baking dish. Refrigerate the dessert for at least 2 hours, or until set.
