I'm Welsh, British, so I'll explain.
Scotland, England, Wales and both the North & Republic of Ireland are part of Great Britain.
All of them are separate countries with their own cultures, but together they make the British Isles aka. Great Britain, the group of countries clustered together as islands. That's how they're seen from a geographical point of view.
The United Kingdom is the political kingdom, which is England, Wales, Scotland and Northern Ireland. The Republic of Ireland isn't part of that.
But I see what you mean, Scotland is it's own country, with it's old ancient culture, languages, saints, foods and lore. But it's part of Britain. Wales and Ireland have their own languages, cultures, foods, etc. as well. But they're still part of Britain.
As for British automatically meaning English, well, that's wrong. I'm British, and I'm not English, I'm Welsh.
So if you say British, and mean English, just say English.
British could mean English, Scottish, Welsh or Irish. It's a collective term for all the nationalities of the countries in the UK or in GB.
