Apple Pie Cupcakes with Vanilla Bean Frosting

We have posted other apple pie cupcake recipes, but this one from Spoonful of Flavor is a little different. The cake is wonderfully moist and spicy with nutmeg and ground cloves but the best part is the vanilla buttercream frosting around the pie filling.  Mmm…..it’s sort of like whipped cream (but better!) on top of apple pie.
