(this got really long i'm sorry)
1. i honestly feel like haytham, despite the obvious rivalry and the knowledge of his fatherhood kind of being...unexpectedly thrust onto him twenty years later, would still feel some sense of paternal obligation out of respect for ziio, and would therefore try to set a Good Example in maintaining his restraint with his feelings. so he's definitely more reluctant to engage in anything beyond the norm, at least until the mutual Feelings and Attraction become known to them both.
connor, on the other hand, being a young, headstrong, quick-tempered puppy, has fewer reservations about acting on his emotions and so he's the one to initiate and he kisses first. it's endearing in its sincerity but very awkward LOL
2. since connor has known who haytham is (probably) his entire life, i feel like he's had a lot more time to process the knowledge of his existence and once he sees him in person for the first time (during the boston massacre with achilles), a seed is planted in his head (and heart tbh) and he begins to create this idea and fantasy in his mind about haytham that festers for years up until they finally meet. so kind of like my first point, he doesn't struggle as much to reconcile his feelings and accept them because he's already had so much time to consider them. also, without having typical western cultural upbringing, he's less hung up on the moral/social implications. haytham, on the other hand...i like to think it's not until the mission at valley forge (revealing washington's treachery) when, faced with the prospect of losing connor he finally realizes that he would, in fact, do anything for this boy.
3. haytham tops, obviously. at least in the beginning.
