The flavors of traditional churros are mixed with the light texture of crepes in these baked churros crepes. They are a fun new take on an old favorite treat!
Ingredients: 1 cup all-purpose flour. 2 tablespoons granulated sugar. 1/4 teaspoon salt. 1 cup milk. 2 large eggs. 2 tablespoons unsalted butter, melted. 1 teaspoon vanilla extract. 1/4 cup cinnamon sugar for topping. Cooking spray for greasing.
Instructions: Warm your oven up to 375F 190C and put parchment paper on a baking sheet. Put the flour, sugar, and salt in a bowl and mix them together. Mix the milk, eggs, melted butter, and vanilla extract in a different bowl using an electric mixer. Add the wet ingredients to the dry ones and mix them together until you get a smooth batter. Lightly spray cooking spray on a nonstick skillet or crepe pan and heat it over medium-high heat. Put a little of the crepe batter into the pan and swirl it around to make a thin, even layer. The crepe is done when the edges begin to lift and the bottom turns golden brown, which should take about two minutes. Change the crepe over and cook the other side for an extra minute or two. Place the cooked crepe on the baking sheet that has been prepared, and then sprinkle it with cinnamon sugar. Shape it into a churro-like shape, and do it again with the rest of the batter. Roll up all the crepes and cover them with cinnamon sugar. Then, put them in an oven that has already been heated for 5 to 7 minutes to make them crispy and the sugar caramelize. Enjoy the warm baked churros crepes!
