This was the first really great bowl of ramen I had in Japan and still remains a measure for all other bowls. The soup is a perfect mix of pork tonkotsu flavor, abura, and fishy katsuobushi dashi. It tastes of the sea in a very good way, with the porky fellow hanging all out everywhere just chillin. Quite simply it remains my all time favorite tasting soup (will insert new name here if it changes).
The big chops of white onions and the green onions have just the right texture contrast. The egg was perfect, although not sliced open for display. The pork chyaashuu has also been hit out of the park. It’s long boiled, grilled a bit to crisp up the fatty bits,and then shredded. The mix of meat to fatty bits is perfect every time too. They are aware of how good it is.
Now the men or noodles. They are for this bowl of the thin variety and not my favorite and are not able to be substituted. They have a bowl of tsukemen with fat noodles but I am so addicted to this form of chyaashuu I always suffer through the noodle envy. This is why it is not a perfect ten for me. One day I will have to get their tsukemen with the standard chyaashuu and give it a go. Prime time waiting time is about 30 minutes.
