Got to visit Wiard’s Cider Mill. I had suffered another intense migraine flare up the day before so I was in pain but I was with my family and got to do a hay ride even in the heat I still got to enjoy it. I focused on the good and pushed through the discomfort to make it a wonderful day. Ingredients: 2 cups all-purpose flour. 1/2 cup granulated sugar. 2 tsp baking powder. 1/2 tsp baking soda. 1/2 tsp salt. 1 tsp ground cinnamon. 1/2 tsp ground nutmeg. 1/2 cup unsalted butter, melted. 2/3 cup apple cider. 2 large eggs. 1 tsp vanilla extract. For the cinnamon sugar coating:. 1/2 cup granulated sugar. 1 tsp ground cinnamon. 1/4 cup unsalted butter, melted.
Instructions: Preheat your oven to 350F 175C. Grease a donut pan and set aside. In a large mixing bowl, whisk together the flour, sugar, baking powder, baking soda, salt, cinnamon, and nutmeg. In another bowl, whisk together the melted butter, apple cider, eggs, and vanilla extract. Pour the wet ingredients into the dry ingredients and stir until just combined. Spoon the batter into the prepared donut pan, filling each cavity about 2/3 full. Bake in the preheated oven for 12-15 minutes, or until the donuts spring back when touched. While the donuts are baking, prepare the cinnamon sugar coating. In a shallow bowl, mix together the granulated sugar and ground cinnamon. Once the donuts are done, remove them from the oven and allow them to cool in the pan for a few minutes. While they are still warm, brush each donut with melted butter and then roll them in the cinnamon sugar mixture to coat evenly. Transfer the coated donuts to a wire rack to cool completely.
