Dessert Alternatives - Diabetic Style

You’re invited to a New Years Eve potluck party. You’re asked to bring dessert. You’re diabetic but want to bring something everyone would like and you can eat. Now what to bring? Think about bringing something light - colorful - flavorful - unusual - diabetic friendly...like cinnamon baked walnuts with bowls of raspberries and blackberries on the side. By this time in the holiday season, everyone has likely had their fill of pies, cakes, candies, cookies - be the change of pace dinner guest. Kick the New Year off right!
Cinnamon Walnuts
2 c. walnuts
2 t. margarine
1 1/2 t. cinnamon
Preheat oven to 300 degrees. In a deep sauce pan, melt margarine and stir in walnuts coating thoroughly. Bake in a glass dish for 30 minutes. Return nuts to saucepan, add cinnamon coating thoroughly. They’re great the next morning on cereal with milk if there are any nuts or berries left!
