These mini Cinnamon Bun Cupcakes are a delightful twist on classic cinnamon buns, perfect for a sweet treat any time of the day.
Ingredients: 1 cup all-purpose flour. 1/2 cup granulated sugar. 1/2 tsp baking powder. 1/4 tsp baking soda. 1/4 tsp salt. 1/2 tsp ground cinnamon. 1/4 cup unsalted butter, melted. 1/2 cup buttermilk. 1 large egg. 1/2 tsp vanilla extract. 1/4 cup brown sugar. 1/2 tsp ground cinnamon. 2 tbsp unsalted butter, softened. Cream cheese frosting. Additional ground cinnamon for dusting.
Instructions: Start by heating the oven to 350F 175C. You can line a muffin tin with cupcake liners. Whisk the flour, sugar, baking powder, baking soda, salt, and 1/2 teaspoon of ground cinnamon together in a bowl. Melt the butter and add the buttermilk, egg, and vanilla extract to a different bowl. Add the wet ingredients to the dry ones and mix them together until they are just mixed. Gather the brown sugar and 1/2 teaspoon of ground cinnamon in a small bowl. Mix them together to make the cinnamon swirl filling. Put a small amount of batter into each cupcake liner, and then add a pinch of the cinnamon swirl mixture. Do it again with another layer of batter and mix it in. After the oven is hot, bake the cupcakes for 18 to 20 minutes, or until a toothpick stuck in the middle comes out clean. Let the cupcakes cool all the way down. Cover every cupcake with cream cheese frosting. You can pipe or spread it on. Add a pinch of ground cinnamon to the frosting to finish. Serve and have fun!
