Baked Quinoa Adobado is a flavorful and nutritious dish featuring quinoa, black beans, corn, and a smoky adobo sauce. This easy-to-make recipe is perfect for a wholesome weeknight dinner.
Ingredients: 1 cup quinoa, rinsed and drained. 2 cups vegetable broth. 1 can 15 oz black beans, drained and rinsed. 1 cup corn kernels, fresh or frozen. 1 red bell pepper, diced. 1 small red onion, finely chopped. 2 cloves garlic, minced. 1 teaspoon cumin powder. 1 teaspoon smoked paprika. 1 teaspoon chili powder. Salt and pepper to taste. 2 tablespoons olive oil. 1/4 cup adobo sauce from a can of chipotle peppers in adobo.
Instructions: Preheat oven to 375F 190C. In a medium saucepan, combine quinoa and vegetable broth. Bring to a boil, then reduce heat to low, cover, and simmer for 15 minutes or until quinoa is cooked and liquid is absorbed. In a large mixing bowl, combine cooked quinoa, black beans, corn, red bell pepper, red onion, and garlic. In a small bowl, whisk together cumin powder, smoked paprika, chili powder, salt, pepper, olive oil, and adobo sauce. Pour the adobo mixture over the quinoa mixture and toss until well combined, ensuring all ingredients are evenly coated. Transfer the quinoa mixture to a baking dish and spread it out evenly. Bake in the preheated oven for 25-30 minutes or until the top is golden brown and the edges are slightly crispy. Remove from the oven and let it cool for a few minutes before serving. Garnish with fresh cilantro or green onions if desired. Serve and enjoy!
