With a touch of warm spice, these cinnamon macarons are a delightful treat. These are a delightful dessert for any occasion, with the delicate almond shells perfectly complementing the creamy cinnamon buttercream filling.
Ingredients: 200g almond flour. 200g powdered sugar. 1 tsp ground cinnamon. 3 large egg whites. 50g granulated sugar. 1/4 tsp cream of tartar. 1/2 tsp vanilla extract. Cinnamon buttercream filling:. 1/2 cup unsalted butter, softened. 1 1/2 cups powdered sugar. 1 tsp ground cinnamon. 1/2 tsp vanilla extract. 2 tbsp milk.
Instructions: Preheat your oven to 300F 150C and line a baking sheet with parchment paper. In a food processor, combine almond flour, powdered sugar, and ground cinnamon. Pulse until well combined. In a separate mixing bowl, whisk the egg whites until foamy. Add cream of tartar and continue whisking until soft peaks form. Gradually add granulated sugar while continuing to whisk until stiff, glossy peaks form. Gently fold the almond flour mixture into the egg whites, along with vanilla extract. Be careful not to overmix. The batter should be thick and smooth. Transfer the batter to a piping bag fitted with a round tip. Pipe small circles onto the prepared baking sheet, leaving some space between each one. Tap the baking sheet on the counter a few times to remove air bubbles. Let the macarons sit at room temperature for about 20-30 minutes until they form a slight skin on top. Bake in the preheated oven for 15-18 minutes, or until the macarons are set and have developed feet. While the macarons are baking, prepare the cinnamon buttercream filling. In a mixing bowl, beat together softened butter, powdered sugar, ground cinnamon, vanilla extract, and milk until smooth and creamy. Once the macarons have cooled completely, pipe the cinnamon buttercream filling onto half of the macaron shells and top with the remaining shells to create sandwiches. Place the macarons in an airtight container and refrigerate for at least 24 hours to allow the flavors to meld together. Serve, and enjoy your delicious Cinnamon Macarons!
