Serve your classic eggs Benedict on avocado slices, crispy bacon, and guacamole that is both sour and creamy. This beloved brunch dish tastes great with guacamole on top.
Ingredients: 2 ripe avocados. 1 small red onion, finely diced. 1-2 cloves garlic, minced. 1-2 jalapeo peppers, seeded and finely chopped. 2 tablespoons fresh cilantro, chopped. 1-2 tablespoons lime juice. Salt and pepper to taste.
Instructions: Cut the avocados in half, take out the pit, and scoop out the flesh into a bowl. Use a fork or potato masher to mash the avocados until the texture you want is reached smooth or chunky. Cut up the jalapeo peppers, add the minced garlic, diced red onion, and chop the cilantro. Then mix the avocados together. Add salt and pepper, and then squeeze lime juice over the whole thing. Make sure that everything is well mixed. Feel free to taste the lime juice, salt, and pepper and make any necessary changes. Make sure the plastic wrap touches the top of the guacamole to keep it from turning brown, and put it in the fridge until you're ready to serve. Put a big scoop of guacamole on top of each French bread slice and top with eggs Benedict, bacon, and avocado slices. Have fun with your eggs Benedict with guacamole!
