A classic New England dish featuring slow-baked navy beans in a sweet and savory molasses sauce with salt pork.
Ingredients: 1 lb navy beans. 1/2 lb salt pork, diced. 1 medium onion, chopped. 1/2 cup molasses. 1/3 cup brown sugar. 1 teaspoon dry mustard. 1/2 teaspoon salt. 1/4 teaspoon black pepper. 1/4 teaspoon ground cloves. 1/4 teaspoon ground allspice. 6 cups water.
Instructions: Navy beans should be rinsed and left in water overnight. Set oven temperature to 300F 150C. Soak the beans, add the salt pork, onion, molasses, brown sugar, dry mustard, cloves, allspice, and salt to a large pot. After bringing to a boil, lower heat, and simmer for ten minutes. When the beans are soft, move the mixture to a baking dish, cover it, and bake it for 6 to 8 hours in a preheated oven. To keep the beans covered, check them periodically and add more water if necessary. Take the beans out of the oven and let them rest for a few minutes before serving, once the sauce has thickened and the beans are soft.
