Ingredients: 3 cups sushi rice. 4 sheets nori seaweed. 1 cucumber, julienned. 1 avocado, sliced. 1/2 lb sushi-grade raw fish such as tuna or salmon, sliced into thin strips. Soy sauce, for serving. Wasabi, for serving. Pickled ginger, for serving.
Instructions: Cook sushi rice according to package instructions and let it cool. Place a sheet of nori on a bamboo sushi mat, shiny side down. Spread a thin layer of sushi rice evenly over the nori, leaving a small border at the top edge. Arrange cucumber, avocado, and raw fish strips horizontally on the rice, about one-third of the way up from the bottom edge. Roll the sushi tightly using the bamboo mat, starting from the bottom edge, pressing gently to seal. Slice the sushi roll into bite-sized pieces using a sharp knife, wiping the knife clean between cuts. Repeat with the remaining nori, rice, and fillings. Serve the sushi rolls with soy sauce, wasabi, and pickled ginger.
