Ingredients: 1 cup diced carrots. 1 cup diced celery. 1 cup diced onion. 1 cup chopped kale. 1 cup chopped spinach. 1 cup diced zucchini. 1 cup diced tomatoes. 4 cups vegetable broth. 2 cloves garlic, minced. 1 tablespoon olive oil. 1 teaspoon turmeric. 1 teaspoon ginger powder. Salt and pepper to taste.
Instructions: Put olive oil in a big pot and heat it over medium-low heat. Dice the onion, carrots, celery, and garlic and add them. Cook the onions until they become clear. Add the ginger powder and turmeric and stir them in. Cook for one more minute. Mix in the spinach, zucchini, kale, and tomato slices. Mix well. Add the vegetable broth. Bring to a boil, then lower the heat and let it cook for 20 to 25 minutes, until the vegetables are soft. Add pepper and salt to taste. Warm up and serve. Have fun!
