The richness of cocoa and the healthful goodness of oats come together in these delicious Chocolate Cocoa Oatmeal Muffins. They are moist, chocolaty, and utterly deliciousperfect for breakfast or as a snack!
Ingredients: 1 cup rolled oats. 1 cup all-purpose flour. 1/2 cup cocoa powder. 1/2 cup granulated sugar. 1/4 cup brown sugar. 1 tsp baking powder. 1/2 tsp baking soda. 1/2 tsp salt. 1/2 cup unsalted butter, melted. 2 large eggs. 1 cup buttermilk. 1 tsp vanilla extract. 1/2 cup chocolate chips optional.
Instructions: Preheat your oven to 350F 175C and line a muffin tin with paper liners. In a bowl, combine the rolled oats and buttermilk. Let them soak for about 10 minutes. In another bowl, whisk together the flour, cocoa powder, granulated sugar, brown sugar, baking powder, baking soda, and salt. Add the melted butter, eggs, and vanilla extract to the oat mixture. Mix well. Gradually add the dry ingredients to the wet ingredients, stirring until just combined. If desired, fold in the chocolate chips. Spoon the muffin batter into the prepared muffin tin, filling each cup about 2/3 full. Bake in the preheated oven for 18-20 minutes or until a toothpick inserted into the center of a muffin comes out clean.
