Remember the coconut poppers I made in this post? Well I revised the recipe && tried it with raspberry, plain coconut, && dark chocolate coconut in addition to the mango. I must admit these little poppers have become quite addictive && the perfect refreshing treat for the summer.

Creamy coconut, dark chocolate, mango && pineapple poppers.
One of my experiments that went absolutely right. These tasteful treats are great way to keep the calorie count low while indulging in every single bite.
Ingredients:
two 13.5 cans of coconut milk.
heavy cream (or condensed milk).
coconut flavoring.
unsweetened coconut flakes (or sweetened coconut if preferred).
vanilla extract.
honey (optional).
dark chocolate with 65%+ cacao (or milk chocolate).
fresh pineapples cut into cubes.
ripe mangos cut into pieces.
ice cube trays.
Use a medium sized sauce pan to heat the two cans of coconut milk, heavy cream (about half a large carton), 2 tbsp of vanilla extract, coconut flavoring, && honey to taste. Then bring the mixture to a boil && add the coconut flakes. Since I love coconut, I added a lot of flakes to the mixture. Let the mixture boil for about 5 minutes then transfered it to a different container && let it cool for at least an hour in the refrigerator.
Note: For a sweeter taste, add more honey && sugar.
While the mixture is cooling, place your fruit chunks into the bottom of the ice tray. Use a cheese grater to grate the chocolate into finely shredded pieces. Sprinkle the chocolate over the fruit in the ice trays. Make sure the mixture has completely cooled before pouring it into the ice tray. If it isn't completely cooled, the chocolate shreds will melt (unless you don't mind). Put the ice tray into the freezer && let it sit for at least 5 hours or overnight. Then take the cubes out of the tray && enjoy.
I'm obsessed with these little things && I have a feeling that I'll be making different variations of these all summer. They're perfect for this southern heat.
